Raw Walnut Tacos {22-Day Revolution}

Serves: 4-6
- Taco meat:
- 2 C walnuts
- 1-1/2 Tbs cumin
- 1 Tbs coriander
- 2 Tbs balsamic vinegar
- 1 Tbs coconut aminos
- dash paprika
- dash garlic powder
- dash black pepper
- Garnish:
- 2 avocados, peeled, pitted, and sliced
- ½ pint cherry tomatoes, halved
- ½ Tbs parsley flakes
- pinch of black pepper
- pinch sea salt
- 1 lime
- The rest:
- 2 heads of romaine lettuce
- Separate and wash the romaine leaves and set aside.
- Combine all of the taco meat ingredients in a food processor and pulse a few times, careful not to grind them too small.
- Spread the walnut meat on the romaine leaves and garnish with cilantro (if using), avocado slices, tomato, parsley, pepper, salt, and lime juice.
- Enjoy!
