Lemon Poppy Seed and Cranberry Bread/Cake

Vegan MoFo, Day 30!!

Lemon Poppy Seed and Cranberry Bread/Cake -- Epicurean VeganWell, it’s the final day of Vegan MoFo! I can’t believe I blogged everyday this month except for one stinkin’ day! Oh well—it was definitely a fun challenge, but I’m a little relieved at the same time.
This cakey bread is not overly sweet since I just used agave as a sweetener, so icing it will definitely give it more of a sweet punch. You can also make this in a 9×5 loaf pan, or two smaller loaf pans, making it more of a bread than a cake. I like having options. 🙂

INGREDIENTS:
1/2 C almond milk
1/3 C poppy seeds
3/4 C agave nectar
3/4 C Earth Balance, softened
3 tsp Ener-G Egg Replacer + 4 Tbs water
2 Tbs lemon juice
1-1/2 C flour
1/2 C whole wheat flour
1-1/2 tsp baking powder
1-1/2 tsp baking soda
1/2 tsp salt
1 C dried cranberries

Icing:
About a cup of Confectioners’ sugar
2-3 tsp lemon juice

DIRECTIONS:
Preheat oven to 325. Grease a bundt pan. Whisk together egg replacer powder and water; set aside. In a small saucepan, heat the milk. Once it begins to boil, remove from heat and stir in the poppy seeds; set side. In a large bowl, cream together butter and honey until smooth, then add egg replacer. In a small bowl, combine flours, baking powder, baking soda, and salt. Take half of the flour mixture and add it to the butter mixture and combine well. Add milk mixture, then the rest of dry ingredients. Stir in the cranberries. Pour into the prepared pan and bake for 30 minutes.

Lemon Poppy Seed and Cranberry Bread/Cake -- Epicurean VeganTo make the icing, combine sugar and lemon juice, add more of either ingredient to reach desired consistency. Once bread is cool, or just slightly warm, drizzle with icing. Enjoy!

Almond Sour Cream Coffee Cake

Almond Sour Cream Coffee Cake -- Epicurean VeganI love almond anything. I even love anything almond-scented. This cake was a breeze to make and has a cake/cookie consistency. In fact, the dough is very cookie dough-like, so don’t be alarmed–it’s supposed to be that way! A slice of this is perfect for dessert or with that morning tea or coffee.

INGREDIENTS:
Cake:
1/2 C  Earth Balance margarine
1 C sugar
3 tsp Ener-G Egg Replacer
4 Tbs water
1 tsp vanilla
1 tsp  almond extract
1/4 C Tofutti sour cream
2 C flour
1 tsp baking powder
1 tsp soda
1/4 tsp salt
Strudel:
1/2 C brown sugar
1 Tbs flour
2 Tbs butter
Glaze:
1/2 C powdered sugar
1/4 tsp almond extract
2-3 tsp non dairy milk

DIRECTIONS:
Preheat oven to 350. In a small bowl, whisk together the egg replacer and water; set aside. In a large bowl, cream together margarine and sugar. Add “egg” mixture to butter mixture and combine well. Add vanilla and almond extracts and stir well to combine. In a medium bowl, combine flour, baking powder, baking soda and salt. Add the flour and sour cream to the butter mixture, but do it alternatively; starting and ending with the flour. The mixture will resemble cookie dough.

For the strudel, chop up the butter, add the brown sugar and flour and use a pastry blender to make it crumbly. Grease a bundt pan and sprinkle 1/3 of strudel in the pan. Next, take take 1/2 of the dough and using your hands, spread it somewhat evenly in the pan, on top of the strudel. Add another 1/3 of the strudel, then the other half of the dough. Sprinkle with remaining strudel.

Bake for 30-35 minutes.

Meanwhile, to make the glaze, whisk together powdered sugar, almond extract, and the nondairy milk. Drizzle over warm cake and enjoy!

Cinnamon Coffee Cake

Cinnamon Coffee Cake -- Epicurean VeganSo I finally got The Joy of Vegan Baking by Colleen Patrick-Goudreau, author of my other favorite cookbook, The Vegan Table, and as you can see . . . I’ve already picked out some recipes to try.

Ideal timing for the coming fall and winter! The 6th Grader was craving coffee cake, so that’s where we started and it didn’t disappoint. The recipe is quite easy and perfect for throwing together for last minute guests.

INGREDIENTS:
Cake:
1 C nondairy milk (I used almond milk)
1/3 C canola oil
1 Tbs white distilled vinegar
1 C unbleached, all purpose flour or whole wheat pastry flour (I used all purpose)
1/2 C granulated sugar
1 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp salt
Crumble:
3/4 C unbleached all purpose flour, or whole wheat pastry flour (again, I used all purpose)
1/4 C granulated or brown sugar (I used brown sugar)
1-2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp salt
3/4 C chopped walnuts (I used pecans as I was out of walnuts)
1/3 C canola oil or nondairy butter, melted (I used Earth Balance butter)

DIRECTIONS:
Preheat oven to 350. Grease a 9″ square baking dish/cake pan. To make cake, combine milk, oil, and vinegar in a bowl and set aside. In a large bowl, mix together the flour, sugar, baking powder, baking soda, cinnamon, ginger, and salt. Add the milk mixture and stir until just combined. Pour into the prepared baking dish.

Cinnamon Coffee Cake -- Epicurean VeganTo make the crumble, in a small bowl, combine the flour, sugar, cinnamon, ginger, salt, and walnuts. Add the butter or oil and use your hands to thoroughly work it into the dry ingredients. Spoon on top of the batter (I found sprinkling with my hands worked better) and covering the entire area.

Cinnamon Coffee Cake -- Epicurean VeganBake 35-40 minutes or until a toothpick inserted in the center comes out clean. Let it cool slightly and serve warm or at room temperature. I think this would also be yummy if drizzled with some some icing once it cooled completely. . . Enjoy!

Red Velvet Cake

Red Velvet Cake -- Epicurean VeganOkay, this cake could have been one of the most amazing vegan desserts ever. . . if I hadn’t of screwed it up. Really, it was all my fault. Apparently, I didn’t know the difference between 2-1/2 cups and say. . . 4 cups. Of the dry ingredients. What was I thinking? I wasn’t. Got heavy-handed with the dry baking mix and the cake ended up a bit dense (much like the baker). I thought the flavor was really good and the “buttercream” frosting was delicious! Plus, it’s gluten-free!

So I’ve only posted the winners before, but c’mon—the pictures! I had to post it after all the work and it is my birthday for at least another 45 minutes, after all, so I can do what I want! 🙂 Really, if it hadn’t been for my mistake, I truly think this recipe is a winner. INGREDIENTS:
Cake:
1 C gluten-free vanilla rice milk
1 tsp cider vinegar
2-1/2 C Betsy’s Baking Mix (below. . . and this is where I screwed up because the mix makes more than 2-1/2 cups)
1 tsp salt
1 tsp xanthan gum
1-1/2 C granulated sugar
1/2 C organic palm oik shortening
2 Tbs unsweetened cocoa powder
1 ounce red food coloring
1/4 C +3 Tbs unsweetened applesauce
1 tsp vanilla extract
1 Tbs distilled white vinegar
1 tsp baking soda
Betsy’s Gluten-Free Baking Mix:
3-3/4 C garbanzo flour
2-1/4 C potato starch
1-1/2 C tapioca starch/flour
(Combine all ingredients with a wire whisk. Seal in an airtight container and shake vigorously for 1 minute)
Frosting:
1-1/2 C Earth Balance margarine
4-1/2 C confectioners’ sugar
Vanilla soy/rice/almond milk
2 tsp vanilla extract

DIRECTIONS:
Preheat oven to 350. Grease two 9″ round cake pans. In a small bowl, make “buttermilk” by combining rice milk and cider vinegar. In a large mixing bowl, combine the baking mix (just the 2-1/2 cups) with the salt and xanthan gum. In the bowl of a stand mixer, cream together the sugar and shortening. Meanwhile, in a separate small bowl, mix the cocoa powder and food coloring to form a paste; set side.

Add the applesauce and vanilla to creamed shortening and sugar blend until the mixture is light and creamy. Add the cocoa powder paste and mix well. Alternately add the dry ingredients and the “buttermilk” mixture to the batter, beginning and ending with the dry ingredients. Pour the white vinegar into a small cup and sprinkle the baking soda over it. Immediately pour the fizzing combo into the cake batter and thoroughly combine the two mixtures.

Divide the batter between the prepared pans and bake the cakes for 30-35 minutes. Let cakes cool completely in their pans on a cooling rack. Turn cakes out of their pans.

Red Velvet Cake -- Epicurean VeganTo make frosting: With a mixer, cream the butter until fluffy. Alternately, add the confectioners’ sugar and enough soy milk to reach desired consistency. Add the vanilla extract and mix well.

Frost the top of each cake layer. Transfer 1 layer to a serving plate and set the other layer on top. Frost the sides of the cake. Store the frosted cake, covered and refrigerate, for up to 3 days.

Red Velvet Cake -- Epicurean VeganI think a scoop of soy ice cream on top would have been perfect — and possibly would have even saved me, but of course, I didn’t have any!
