Raw Walnut Tacos {The 22-Day Revolution}

Raw Walnut Tacos, The 22-Day Revolution -- Epicurean VeganEarlier this month, I brought you my review of The 22-Day Revolution, a new plant-based cookbook by Marco Borges. I promised to post the Raw Walnut Tacos recipe, so here it is. Everyone here loved these; great flavor and ready in 10 minutes. The only thing I added was some cilantro. This makes a fabulous lunch option, or a light dinner.

INGREDIENTS:
Taco meat:
2 C walnuts
1-1/2 Tbs cumin
1 Tbs coriander
2 Tbs balsamic vinegar
1 Tbs coconut aminos
dash paprika
dash garlic powder
dash black pepper
Garnish:
2 avocados, peeled, pitted, and sliced
1/2 pint cherry tomatoes, halved
1/2 Tbs parsley flakes
pinch of black pepper
pinch sea salt
1 lime
The rest:
2 heads of romaine lettuce

DIRECTIONS:
Separate and wash the romaine leaves and set aside. Combine all of the taco meat ingredients in a food processor and pulse a few times, careful not to grind them too small.

Ingredients
  • Taco meat:
  • 2 C walnuts

Directions

    Thanks for the recipe. I bought the book but couldn’t find how many servings the recipe is for. I find it missing for most of the recipes, perhaps I’m just missing that part. Thanks again.

      Yes, I noticed that as well. With this recipe, it made about 2 cups of filling and about 4-5 tacos. Hope that helps.

    We just started this program and had the walnut tacos last night. They were so good, but you could really cut the recipe in half. Very filling!

    The walnuts and avocados alone come to about 2,000 calories, which is quite high for one meal. Did you do the full 22 day challenge? If so, did you find that you felt healthier or lost weight even when incorporating such a highly caloric recipe?

      I think 2000 is a little bit of a stretch. One avocado is about 230 calories, but yes, 1 cup of walnuts is a little over 500 calories. However, this recipe serves 4-6, so one person is not consuming this entire dish at one sitting. Another thing to consider, is that walnuts and avocados consist of healthy fats and oils which account for the high calories. The walnuts are also high in protein, so you will stay fuller longer. Given these things, I think these tacos are a healthy option for losing weight.
      I have not done the 22 day challenge, but I have made several of the recipes and have really enjoyed them.

        I have the book and so far so good.

        I’m doing vegetarian. So I added a sprinkle of feta cheese cheese on these. (But this can be easily invited for it to be vegan) They end up at about 225-250 calories per taco this way and they were delicious. And u agree these are filled with good fats, lots fiber and protein.

        My husband who is weary of vegetarian/ vegan diet finally tried this recipe after seeing me follow a vegetarian diet for the past two weeks. He loved them. And if a meat lover like him loves it, then this the recipe is a winner!!!
        2 cups of walnuts is enough for 10 tacos. Today I made 2 for me and 3 for my husband. I’m saving half the walnut stuff in a zip lock bag in the fridge to eat 3 days later. (Walnut tacos again in 3 days).

          I love hearing when meat-eaters admit that vegan/vegetarian food isn’t going to kill them! I think these tacos are a great option for eating healthy. Keep me posted on your progress and any tips you have regarding the recipes in the book.
