“Bacon” Wrapped Roasted Asparagus

"Bacon" Wrapped Roasted Asparagus -- Epicurean VeganI usually don’t mind putting a little work into a dish, especially when I know it’s worth it. These take about 15 minutes or so to prepare, but you won’t be sorry.  There are a few different ways to secure the “bacon” to the asparagus: I broke toothpicks in half and secured each end of the bacon strip to the asparagus stalk. You can also wrap the bacon just around the middle and secure it once. Lastly, you can also use bamboo skewers through the middle to secure. Either way, they’ll make the perfect accompaniment to any meal.

INGREDIENTS:
1 pkg Smart Deli Bacon
1 bunch asparagus, ends trimmed
Olive oil

DIRECTIONS:
Preheat oven to 400. Slice each bacon slice in two, lengthwise. Wrap around each asparagus slice and secure with toothpicks. Place on a foil-lined, lightly oiled baking sheet.

Brush with olive oil and bake for 25-30 minutes.  Enjoy!

    ohmygosh, I love this “bacon” idea! It looks great!
    I have a husband who LOVES real bacon… So on the scale of fake bacon to real bacon, how bacon-y would you say these taste?

      Well…for someone who LOVES real bacon, they’ll definitely taste a difference, but I would say on a scale of 1 to 10, the Smart Bacon is about an 8. I like the tempeh bacon a lot though (the one that doesn’t wrap around on the water chestnut recipe). My suggestion would be to maybe season the strips with some salt and pepper before wrapping them around the asparagus or maybe even marinating them a little in liquid smoke to give it a more meaty taste. Thanks!

        Hahhaahah, darn.. Yeah, he won’t enjoy it then… Ah well!
        An 8 works for me though! 😉
        Hmm, I will look for this stuff for sure… What is it made out of?

          Well, lots of stuff actually: Water, soy protein isolate, wheat gluten, soybean oil, texured soy protein concentrate, textured wheat gluten, less than 2% of: natural smoke flavor, natural flavor (from vegetable sources), grill flavor (from sunflower oil), carrageenan, evaporated cane juice, paprika oleoresin (for flavor and color), potassium chloride, sesame oil, fermented rice flour, tapioca dextrin, citric acid, salt.

          But to me, better than a cute little piggie! 🙂 I have a friend who says he’d give up his wife before giving up bacon! (I’m pretty sure he’s kidding 😉 )
