Lemony Quinoa-Almond Granola

Lemony Quinoa-Almond Granola -- Epicurean VeganOkay, yes, this is from Big Vegan again. And no, I won’t be posting every single recipe from this fabulous cookbook. I just saw this and had to make it. I’ve been needing to get more creative with breakfast and this recipe jumped out at me. I made it last night so breakfast would be a snap this morning. It has a bit more oil and sugar than my granola recipe so I won’t be replacing it with it, but it’s certainly a nice change! The only thing I might add next time is some chopped coconut flakes, otherwise, it was perfect with some soy yogurt and fruit.

INGREDIENTS:
3 C rolled oats
2 C quinoa flakes (look in the cereal aisle)
1/2 C whole wheat flour
1 tsp cinnamon
1/4 tsp salt
1-1/2 C all-fruit lemon concentrate, thawed
1/2 C brown sugar
1/2 C vegetable oil
2 tsp vanilla extract
1/2 tsp almond extract
1 C almonds, chopped
1 C apricots, chopped

DIRECTIONS:
Preheat oven to 300. In a large bowl, combine the oats, quinoa flakes, flour, cinnamon, and salt. In a smaller bowl, whisk together the lemonade, sugar, oil, and extracts. Pour into the dry ingredients and using your hands, combine thoroughly. Let it sit for 10 minutes to absorb the liquid.

Spray a baking sheet with cooking spray. Since I don’t have rimmed baking sheets, I used foil to create small sides on the pan. Spread the granola on the baking sheet and bake for 1 hour, turning it over with a metal spatula every 15 minutes.

I added another 5 minutes to the last 15. Ovens temps vary, so check often.

Let the pan and granola cool on a rack, then stir in the apricots. Stored in a ziplock or airtight container, the granola will last for 2 weeks at room temperature. Enjoy!

Plum and Pear Cobbler

Plum n' Pear Cobbler -- Epicurean VeganAdmittedly, I’m not  great about eating fruit. Very rarely, I’ll bite into an apple, but give me a luscious bunch of kale and I’m all over it. So I always feel bad when I have to toss squishy apples and pears away because no one has eaten them. But baked fruit, I can do. I’ll take apple pie or a fruit tart over chocolate cake any day, and add some nondairy ice cream and I’m a happy camper. I wasn’t about to let these pears and plums whither away on my counter, so the Seventh Grader and I made this wonderful cobbler!

Plum n' Pear Cobbler -- Epicurean Vegan

INGREDIENTS:
4 pears, sliced (leave the skins on)
4-5 plums, slice (with skins)
1/2 C brown sugar
2 Tbs flour
1 tsp cinnamon
1/4 C vegan margarine, cut into chunks
1 C oats
1/4 C almond milk (or other nondairy milk)
Nondairy ice cream (optional)

DIRECTIONS:
Preheat oven to 375. Combine the fruit in a baking dish–an 8×8 would be fine.

In a small bowl, combine the brown sugar, flour, cinnamon, margarine, oats, and milk. Use a fork or pastry blender to combine everything; making sure the butter turns to small pea-sized pieces. It will be a wet mixture. Top the fruit with the oat mixture.

Bake covered for 20-25 minutes. (It will smell sooooo good baking . . . 🙂 ) Top with some nondairy ice cream and thoroughly enjoy!

Chocolate-Espresso Balsamic Granola

Chocolate-Espresso Balsamic Granola -- Epicurean VeganOh, my. This is good. This is similar to my original granola recipe, but tweaked a little. Flavored oils or balsamic vinegars are ideal for granola. I don’t care for overly sweet granola, so this Chocolate-Espresso balsamic vinegar adds just the right amount of sweetness. Great for cereal, on top of yogurt, or with ice cream. A new olive oil/vinegar shop recently opened up downtown and a friend and I spent at least 45 minutes tasting all their different varieties. I found what I was looking for. A little pricey at $15, it will be slowly savored.

INGREDIENTS:
2 C oats
1 C coconut, shredded
1/2 C wheat germ
1/2 C each: walnuts, almonds, and sunflower seeds
1 tsp salt
1/4 C Chocolate-Espresso Balsamic vinegar
1/8 C brown rice syrup
1/4 C almond milk
1/8 C olive oil
6 to 8 oz dried fruit, such as craisins or cherries

DIRECTIONS:
Preheat oven to 300. Line a large baking sheet with foil, and mist with cooking spray. In a large bowl, combine the oats, coconut, wheat germ, nuts, and salt. In a small bowl, whisk together the balsamic vinegar, oil, brown rice syrup, and almond milk.  Add the wet ingredients to the dry ones and mix well. Spread the granola mixture on the prepared baking sheet; spread it out evenly.

Chocolate-Espresso Balsamic Granola -- Epicurean VeganBake for 35-40 minutes, or until it begins to brown. Transfer to a large bowl and stir in the dried fruit. Once it has cooled, store in an airtight container. Enjoy!

Peanut Butter, Chocolate and Cherry Granola Bites

Peanut Butter, Chocolate and Cherry Granola Bites -- Epicurean VeganJess at Healthy Exposures posted these last week, and I knew right away I had to try them. I made a few changes, just based on what I had on hand and on my taste preferences, such as subbing brown rice syrup for the molasses, as I’m not big on molasses. You can see her original recipe here.

INGREDIENTS:
3/4 C quick oats
2 Tbs brown rice flour
2 Tbs wheat germ
1/2 C peanuts, chopped
1/4 C sunflower seeds
1/4 C chia seeds
2 Tbs flax seeds
1/2 C dried cherries, chopped
1/2 C dark chocolate chips
1/2 a banana
2 Tbs brown rice syrup
3 Tbs almond milk
3 Tbs peanut butter
1 tsp vanilla

DIRECTIONS:
Preheat oven to 350. Lightly grease a mini-muffin pan (genius idea, Jess)! Set aside. In a large bowl, combine oats, flour, wheat germ, peanuts, seeds, cherries, and chocolate chips.

Peanut Butter, Chocolate and Cherry Granola Bites -- Epicurean VeganIn a smaller bowl, mash the banana with a fork add the syrup, almond milk, peanut butter, and vanilla. Whisk thoroughly and combine well with the dry ingredients.

I didn’t fill them quite to the top, but you can—they won’t overflow when they bake. Depending on the size of muffins cups you use, the number you get will be different; I got 15.

These make such a great little snack and I imagine, a heck of a lot healthier than store-bought granola bars. As an alternative, you can use a 8″ baking pan and then cut them into squares after they bake. Either way, you’re sure to enjoy them, especially since they’re so simple to make.

Iced Oatmeal Cookies

Iced Oatmeal Cookies -- Epicurean VeganYum! This recipe comes from Vegetarian Times (February 2010 issue) and they are quite delicious and easy to make. The recipe calls for a 1/4 C of applesauce and of course, I didn’t have any. We’re not big applesauce eaters here and I knew that any leftovers would turn different shades of green and white, so I opted to make my own. I just chopped up 1/2 a Grannie Smith–skins and all–and threw it into the food processor with a 1/4 cup of water and a tsp of sugar. Worked beautifully! The lemon-flavored icing is the perfect accompaniment to these cookies!

INGREDIENTS:
2 Tbs flaxseed meal
1 C oat flour (I ground 1-1/2 C of oats to reach a cup of oat flour)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
2 Tbs margarine (I used Earth Balance)
1/2 C light brown sugar
1/4 C sugar
1/4 C applesauce (or they recommend prune puree)
1 tsp vanilla extract
1-1/2 C old-fashioned oats
1/2 C raisins or dried cranberries (I used 1/4 C golden raisins and 1/4 C of orange-flavored craisins)
Icing:
3/4 C confectioners’ sugar
2 Tbs lemon juice

DIRECTIONS:
Stir together flax meal and water in a small bowl; set side. Whisk together oat flour, baking powder, baking soda, salt and cinnamon in a large bowl; set aside. Beat margarine, brown sugar and sugar with an electric mixer, 1-2 mins, or until light and fluffy. Add applesauce, vanilla and flax meal mixture and beat until smooth. Stir in oat flour mixture with a spatula or wooden spoon. Add oats and raisins/craisins, stir to combine. Cover and chill 2 hours or overnight. (I went with the 2 hours)

Iced Oatmeal Cookies -- Epicurean VeganPreheat oven to 350. Line baking pans with parchment paper or coat with cooking spray. (I like to use the parchment or waxed paper). Roll cookie dough into golf ball-sized rounds, and place them 1-1/2″ apart on baking sheets. Flatten each cookie to 1/4″ thickness with the bottom of a drinking glass dipped in water.

Iced Oatmeal Cookies -- Epicurean VeganBake 10-12 mins or until cookies look dry on top and are just starting to brown.
Meanwhile, to make icing: Whisk together the confectioners’ sugar and lemon juice in a small bowl until smooth. Icing should be thick, but spreadable. Gently brush icing on hot cookies with a pastry brush. (On the second batch, I waited until the cookies cooled to ice them and I liked that better–the icing didn’t “melt” into the cookies). Transfer to a wire rack to cool completely. Makes about 24 cookies. Store cookies in an airtight container. Enjoy!
