Field Roast and Avocado Burritos

Field Roast and Avocado Burritos -- Epicurean VeganYikes, it’s been a while. I have so many new recipes on my list to make, but I’ve been so busy with various different projects, that throwing together a simple favorite has been all I’ve had time for. I’ll get back into the swing of things. I can’t tell you how happy I am to be emerging from the cold and depressing days of winter! We even got our garden started this weekend. (I’ll be bringing you Garden Watch soon). In the meantime, here’s a fast and simple meal that is ready in less than 30 minutes.

INGREDIENTS:
1 Tbs chipotle-flavored olive oil (or regular)
1/2 C yellow or white onion, chopped
1/2 C red onion, chopped
4 Field Roast Sausages, Italian Seasoning flavor, crumbled
2 avocados, peeled, pitted and sliced
4 Flour tortillas
Other (optional) burrito fillings: vegan sour cream, salsa, cilantro, diced tomatoes, Daiya cheese

DIRECTIONS:
Heat the olive oil over medium-high heat and add the onions. Cook 5-7 minutes, or until they soften. Add the Field Roast and cook over medium heat until heated through, again, for 5-7 minutes.

On a warmed tortilla, layer on some sour cream, Field Roast mixture, avocados, and any other burrito fillings you want. Roll up and enjoy! (See, I told you it was easy)!

Ingredients

Directions

Thai Green Curry Chickpea Burritos

Thai Green Curry Chickpea Burritos -- Epicurean VeganWhen we were visiting my sister in Northern California recently, she made us these fabulous burritos. The ingredients are from Trader Joe’s, so I was sure to pick the items up before returning to Trader Joe’s-less Colorado. 🙁 Taste of Thai makes a green curry paste  though that could be substituted in with some coconut milk. However, a sub for the Cumin and Chickpea mix also required for the recipe, was hard to locate. So if you’re lucky enough to live near a Trader Joe’s, or have a generous relative to send you TJ loot, this recipe is for you. Are you listening, sis? 😉

INGREDIENTS:
1-12 oz jar Thai Green Curry Simmer Sauce
1-8 oz pkg Cumin and Chili Chickpea mix
1 medium zucchini, sliced, then quartered
1-15 oz can chickpeas (garbanzo beans), drained and rinsed
Olive oil
Flour tortillas
Optional: Tofutti sour cream, fresh cilantro

DIRECTIONS:
I sauteed the zucchini and can of drained chickpeas for about 3-4 minutes. Add the bag of seasoned chickpeas and jarred curry sauce. Stir well to combine. Reduce heat to low and simmer covered for 20-25 minutes.

Field Roast Sausage and Vegetable Hash

Field Roast Sausage and Vegetable Hash -- Epicurean VeganWhen I began to make this, just throwing stuff together, I wasn’t planning on posting it, but then I tasted it and damn, I knew I had to share it. Even The Husband called it hands-down the best, most phenomenal breakfast burrito/hash he’s ever had. Wow. Now that my “chef-ego” is inflated, here you go:

INGREDIENTS:
2 Field Roast sausages, Italian flavor
3 small potatoes, peeled and diced
1 small green bell pepper, diced
1/2 a large onion, diced
1 small zucchini, sliced then quartered
1 C sliced mushrooms
2 Tbs olive oil
vegan cheddar, shredded
Flour tortillas, warmed
Garlic & Wine seasoning, to taste (So this is a blend that we got from The Melting Pot a million years ago and here’s what’s in it: salt, soya flour, garlic, sherry wine flavor, cracked pepper, select imported spices, citric acid, and parsley).

DIRECTIONS:
Saute the potatoes in the olive oil for about 10 minutes, or until they just  start to soften. Add the green pepper, onion, and zucchini. Over medium heat, cover and let saute for about another 10 to 15 minutes, or until soft. Season with the garlic blend and then add the sausage (I just tear it apart into small pieces) and the mushrooms. Season again with the garlic blend and cover another 4-5 minutes until the mushrooms are just softening.

Scoop some onto a warmed tortilla and add a little cheese. YUM! Enjoy!

Breakfast Burritos

Breakfast Burritos -- Epicurean Vegan

I love lazy Sunday mornings. The Husband and I decided to combine forces and throw together a tasty breakfast. He loves hasbhbrowns, so he fired those up and I worked on the rest of the ingredients in another pan. It was a lovely joint venture.

INGREDIENTS:
1 16-oz bag hashbrowns
1 red bell pepper, diced
1 yellow bell pepper, diced
4 green onions, sliced thin
2 Field Roast sausages (Chipotle flavor)
1/2 C fresh cilantro, chopped
Olive oil
Salt and pepper, to taste
Flour tortillas, warmed
Optional ingredients: Tofutti sour cream, vegan shredded cheddar, salsa

DIRECTIONS:
Pretty easy: The Husband seasoned the hashbrowns with salt and pepper and cooked them in one skillet, while I sauteed the peppers in some olive oil for about 10-15 minutes in another skillet. I then added the sausage, which just needs to be heated through–no “cooking” involved. I had two leftover sausages from the casserole, so this was perfect.  Then I added the green onions and cooked them a few more minutes until they began to soften. Once the hashbrowns were browned, about 25 minutes, we combined the two pans and stirred in the cilantro. Spoon onto a tortilla, adding the optional ingredients, if using. Enjoy!

Fresh and Healthy Soft Tacos/Burritos

Fresh and Healthy Soft Tacos/Burritos -- Epicurean VeganWhen I don’t have a lot of time but I want my family and I to have a satisfying, healthy dinner, this is one of my go-to meals. I typically have the ingredients all the time and with so many different ingredient options, it’s easy to make the whole crew happy! Packed with protein and veggies, it’s a great option for lunch or dinner.

INGREDIENTS:
1 C cooked rice
1 can refried beans
1/4-1/2 C salsa
vegan cheese, shredded
diced avocado
sliced green onion
cilantro, chopped
Small flour tortillas
Tofutti sour cream
Other tasty options: diced or shredded cucumber, sprouts, lettuce

DIRECTIONS:
Combine cooked rice (I use Minute Rice), refries and salsa in a medium pan, heat on low-medium heat. Stir until heated through.

Fresh and Healthy Soft Tacos/Burritos -- Epicurean VeganSeparate other ingredients into small bowls and I like to start with the sour cream, then layer the beans/rice mixture, then top with cheese, avocado slices, etc. on a warmed tortilla.
