Cheezy Kale and White Bean Soup

Vegan MoFo, Day 10

Cheezy Kale and White Bean Soup -- Epicurean VeganKale is my drug. I love it. This soup is great for fall (or even a cool summer evening) and easy to throw together. It’s hearty without being overly filling, not to mention full of immune-boosting ingredients that will help ward off those pesky winter colds.

INGREDIENTS:
3 cloves garlic, minced
2 Tbs olive oil
1 large leek, chopped
2-15 oz cans great northern or cannellini beans, drained
8 C vegetable broth (or 6 cups broth, 2 cups of water)
1/2 C white wine
1/2 C fresh parsley, chopped
2 Tbs lemon juice
4-5 C fresh kale, torn or chopped
1 C vegan cheddar, shredded
White pepper, to taste
Salt, to taste

Cheezy Kale and White Bean Soup -- Epicurean VeganI just filled my 4 cup Pyrex measuring cup of kale to the top–so about 5 cups

DIRECTIONS:
In a large soup pot, heat the olive oil. Add the garlic and leek and saute until slightly browned. Add the beans and parsley and saute 4-5 minutes.

Cheezy Kale and White Bean Soup -- Epicurean VeganAdd the broth, kale, lemon juice, and white wine. Let simmer, covered, for 20 minutes. Season with salt and white pepper. 5 minutes before serving, add the cheeze. This is strictly an optional ingredient—you can also just sprinkle a little cheeze on individual servings. Enjoy!

Colorful Kale and Potato Casserole

Colorful Kale and Potato Casserole -- Epicurean VeganOh my gosh, this was delicious!! The flavors of the Field Roast sausage and Vegan Rella, really made this dish. This was the first time I used Vegan Rella’s cheddar flavor and like the mozzarella variety, I was in love at first bite. It is truly the best-tasting vegan cheese out there and it melts like it’s nobody’s biz. Combined with the Field Roast, there’s no need to add any other seasonings, which is always a time and money saver!

INGREDIENTS:
Olive oil
1-1/2 C red potatoes, diced small
1-1/2 C kale, stemmed and chopped
1 Field Roast sausage link, Mexican Chipotle flavor, crumbled
1 C cracker crumbs
1 large tomato, diced
1-1/2 C Vegan Rella, shredded

DIRECTIONS:
Preheat oven to 375. In a large skillet, heat some olive oil and cook the potatoes until they begin to soften and brown. Add the Field Roast and kale and cook a few minutes more, covered, until the kale starts to wilt. Layer the crackers on the bottom of a pie plate and sprinkle some cheeze on the crackers. (Vegan Rella can be pretty sticky, so don’t knock yourself out trying to spread it too much).

Kale, Chard and Tofu Calzones

Kale, Chard and Tofu Calzones -- Epicurean VeganWhen I said I was making calzones tonight, The Husband joked, ‘Oh, yeah, those nine pounders?’ Okay, yes, these calzones typically run a little big. I should call them “No Joke Calzones.” They’re a little different than the other calzone recipe I’ve made by adding the same tofu mixture that I use for lasagna and stuffed shells. I had some leftover tofu mixture so I just threw in the freezer—I’ll use add it to a batch of lasagna at some point. This is also a great recipe for sneaking in some extra veggies, especially for the kids—they’ll never know!

INGREDIENTS:
Dough: (from Vegan Planet)
1-1/2 tsp active dry yeast
3/4 C warm water ( I found that I needed another 1/2 cup)
2-1/4 C unbleached all-purpose flour
1 tsp salt
Pinch of sugar or natural sweetener
1 Tbs olive oil, plus more for spreading
The Tofu mixture:
1-14 oz pkg extra firm tofu, drained and pressed
1/3 C nutritional yeast
1 C fresh basil (I also threw in a tablespoon or two of fresh rosemary)
1 tsp garlic powder
1 tsp salt
1/4 tsp black pepper
2 Tbs lemon juice
The rest:
4 C chard and kale, chopped (you can also add in some spinach)
1-3.8 oz can of sliced black olives
6 mushrooms, sliced
1-1/2 C vegan mozzarella cheese
1 jar marinara sauce

DIRECTIONS:
To make dough: Place yeast in a small bowl. Add 1/4 C of the water and stir to dissolve. Set aside for 5-10 minutes. To make the dough in the food processor (like I did), combine the flour, salt, and sugar, pulsing to blend. With the machine running, add the yeast mixture through the feeding tube, along with the olive oil and as much of the remaining 1/2 water (I needed another 1/3 C in addition to the 1/2 C) as necessary to make the dough hold together. To make the dough by hand, combine the flour, salt, and sugar in a large bowl. Stir in the yeast mixture, olive oil, and remaining 1/2 C water until well combined. Turn dough out onto a lightly floured work surface and knead until smooth and elastic, about 3 minutes. Transfer to a large oiled bowl. Spread a small amount of oil on top of the dough, cover with plastic wrap, and set aside in a warm place to rise until doubled in bulk, about 1 hour. Use immediately or store for up to 8 hours in the refrigerator or for 3-4 weeks in the freezer. Make sure it is tightly wrapped in plastic.

To make tofu mixture: Add tofu, basil, garlic powder, salt, pepper, and lemon juice to a food processor and process well until the mixture resembles ricotta cheese.

Preheat oven to 375. Punch the dough down and divide it into fourths. On a lightly floured surface, roll out each piece into a 1/4″ thick circle. Divide the filling equally between the dough circles, leaving a 1″ border around the edge. I layered on some tofu mixture, greens mix, olives, mushrooms, and cheese.

Kale, Chard and Tofu Calzones -- Epicurean VeganPlace on a baking sheet lined with foil that is slightly greased. Bake for 30 minutes, or until golden brown.

Sweet Chili Lime Tofu

Sweet Chili Lime Tofu -- Epicurean VeganThis recipe is tofu-licious! Even though the recipe has a long list of ingredients and you’ll need 3 pans and a bowl, it was extremely easy and it was done in about 25 minutes. I recommend doubling the sauce. As it is, it makes a great glaze for the tofu, but I would have liked it a little more saucy. It made about 5 servings and as I was eating the final pieces of tofu, I was thinking that these would be great toothpicked (minus quinoa and kale) and served as a hot appetizer. Yum!

INGREDIENTS:
Quinoa:
3/4 C quinoa, rubbed/rinsed, drained
Zest from one lime, divided in half and slice lime for garnish (use 1/2 the zest)
2 bruised cardamon pods (optional–I used a dash or two of dried cardamon)
1/4 tsp salt
1 tiny cinnamon stick (optional)
1-1/3 C water
Sweet Chili Lime Sauce:
3 Tbs sugar
3 Tbs tamari
1-3/4 Tbs lime juice
1/2 zest of the lime
1/2 tsp red chili flakes (I didn’t have this, so I used 1/2 tsp of Ancho chili pepper)
1 clove garlic, minced
1/4 tsp salt
4 mint leaves, sliced thinly
The Greens:
1 bunch collard greens, washed with middle veins removed (I used kale)
2-3 Tbs water
1 tsp lime juice
1 pinch salt
The rest:
14-oz extra-firm tofu, drained and pressed
Lime slices for a garnish (optional)
Mint leaves for a garnish (optional)

DIRECTIONS:
Combine the quinoa, 1/2 the lime zest, cardamon, cinnamon stick, salt, and water in a saucepan. Bring to a boil, then cover and reduce heat to low. Cook for 20 minutes, then remove from heat and don’t remove the lid. Let steam for 10 minutes.

Sweet chili lime sauce: Whisk together the sugar, tamari, lime juice, lime zest, red chili flakes, garlic,  salt, and mint until the sugar and salt and dissolved. Set aside.

Sweet Chili Lime Tofu -- Epicurean VeganI sauteed the tofu in a dry skillet for about 10 minutes on each side. The recipe says to add it a “well-seasoned” skillet.  Add the chili lime sauce and stir to coat the tofu. Turn off the heat.  The sauce will bubble up, reduce, and form a glaze.

Sweet Chili Lime Tofu -- Epicurean VeganWhile this is happening, slice up the kale. In a wok (which I didn’t have, so I used a small skillet) add water, lime juice, and salt. Cover with a lid and steam  until tender. (The other thing to do, is just add the greens to the quinoa and steam them that way).

Crispy Kale Leaves

Crispy Kale Leaves -- Epicurean Vegan“They’re weird, but I can’t stop eating them.” This is what my husband said. It’s so true–they’re like paper thin potato chips! They kinda just melt in your mouth but certainly have a crunch–and so good! And did you know…kale is considered an aphrodisiac? Just so you know! 😉 This recipe comes from Vegetarian Times.

INGREDIENTS:
1 lb kale, rinsed and patted dry
2 Tbs olive oil
1/2 tsp kosher salt

DIRECTIONS:
Preheat oven to 325. Coat baking sheet with cooking spray (I used foil). Tear kale into 3″ pieces, removing tough stems. Transfer leaves to a bowl. Toss kale leaves with the oil, until well coated.

Crispy Kale Leaves -- Epicurean VeganSpread on a baking sheet and bake 15 mins. (I did 10). Turn kale with tongs and bake another 10-15 mins (I did 7 more mins) or until edges are browned and leaves are crispy. Sprinkle with salt. Serve warm or cold.  Enjoy!

Red Wine Vinaigrette and Salad with a Kick

So long to boring salads! Between the mustard greens and the Dijon and shallots in the dressing, this salad is anything but tame.

INGREDIENTS:
Vinaigrette:
4 Tbs red wine vinegar
2 Tbs shallots, chopped fine
3 tsp Dijon mustard
4 Tbs olive oil
1 tsp salt
1/4 tsp ground black pepper

Salad:
2 large leaves mustard greens, chopped into 1″ pieces
2 large leaves of kale, chopped into 1″ pieces
2 big handfuls of spinach, chopped into bite sized pieces
8 mushrooms, sliced
2 small tomatoes, diced
1/2 cucumber, diced (not tiny diced–bite sized)
1 big handful sunflower seeds
2 big handfuls craisins
croutons

DIRECTIONS:
Dressing
Whisk together all ingredients, serve immediately, or cover and refrigerate. Makes about a 1 cup
Salad
Combine and toss–I’ll bet you know how to make a salad!
