Marinated Field Roast Sandwiches with Cashew-Horseradish Sauce and Avocado

Marinated Field Roast Sandwiches with Cashew-Horseradish Sauce and Avocado -- Epicurean VeganWhen the Husband says, “Good God, woman, these are amazing,” I can’t help but grin smugly. As I’m sure you’ve gathered by now, I like Field Roast. I like their products because 1.) they taste delicious. And 2.) They aren’t made with strange ingredients. See for yourself. They really do make a healthy meat alternative that even my meat-eating friends and family like. The gyros I make using the Field Roast Celebration Roast are pretty damn good, so I decided to try my hand at another sandwich using the roast. I also made a cashew-horseradish spread that goes perfectly with the sandwiches and the avocado and sauteed onion make it all come together nicely. (And this makes plenty of sandwiches for the week)!

INGREDIENTS:
1 Field Roast Celebration Roast, cut into about 11 slices
1 onion, cut into large pieces
1 avocado, peeled, pitted & sliced thin
Sandwich rolls
Marinade
1 C tamari
3 cloves of garlic, minced
1 Tbs red miso
1 Tbs brown sugar
1/2 tsp lemon juice
1/4 tsp black pepper
1/2 tsp salt
Cashew-Horseradish Sauce
3/4 C raw, unsalted cashews, soaked for an hour or two
1/4 C water
1 clove garlic
2 tsp prepared horseradish sauce
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp lemon juice

DIRECTIONS:
To prepare the marinade, whisk together the marinade ingredients in a medium bowl. Place the Field Roast and onions in a large resealable bag and pour the marinade inside. Seal and coat the contents thoroughly. Chill in the fridge for at least 4 hours, turning once halfway through.

Marinated Field Roast Sandwiches with Cashew-Horseradish Sauce and Avocado -- Epicurean Vegan To prepare the Cashew-Horseradish Sauce, place the garlic clove, salt and black pepper in the food processor and process until the garlic is minced well. Add the cashews, water, horseradish and lemon juice. Blend until smooth. Refrigerate until ready to use.

Spray a grill pan or regular skillet with oil. Over medium heat, saute the onions. (Using tongs, I just removed the Field Roast from the bag and set aside on a plate). Saute until softened and browned. Remove from the pan and add the Field Roast slices; discard the excess marinade. Cook over medium heat for about 4-5 minutes per side.

To assemble, spread some Cashew Sauce on the buns, add a slice of Field Roast, some onion (and maybe even another Field Roast slice), some avocado and some more Cashew Sauce. Enjoy!

Ingredients

Grilled Veggie Sandwiches with Hummus and Avocado -- Epicurean VeganAll right. I have two confessions. First, these aren’t technically grilled, nor do they have avocado on them. *GASP* I know, I’m sorry. But let me explain. So, it’s very early spring here in Colorado and the outdoor grill, much like my legs, are still winterized. But, I do have the spray tan of grills . . .
 Grilled Veggie Sandwiches with Hummus and Avocado -- Epicurean VeganNow, about that avocado. I’ve had 4 avocados sitting in a paper bag on my counter for about 5 days and they are still rock solid. I made the mistake of trying to cut into one and it was like stabbing a butternut squash. And if that wasn’t enough, I tried a second avocado and ended up with the same results. In fact, I couldn’t even get the halves apart! I was all ready to place the beautiful slices of avocado next to the fresh basil . . .

Grilled Veggie Sandwiches with Hummus and Avocado -- Epicurean VeganIn spite of these culinary catastrophes, I assure you, the “grilling” process worked beautifully, and the avocado would be a grand addition to these sandwiches.

INGREDIENTS:
Marinade
1/2 C balsamic vinegar
1/2 C red wine
1/4 C olive oil
2 cloves garlic, minced
The rest
2 small zucchini, sliced length-wise
1 red bell pepper, cut into wide strips
1 eggplant, sliced length-wise, then again length-wise
1/2 large onion, cut into wide strips
1 avocado (preferably real and not imaginary), sliced
1 C fresh basil leaves
1/2 C hummus, homemade (easy) or store bought (even easier)
6 French rolls, or other sandwich bread

DIRECTIONS:
Combine the marinade ingredients in a large zip bag. Add the veggies and let them marinate in the fridge for about an hour. Turn the bag over halfway through. Spray the grill pan with a small amount of cooking spray and heat pan over medium heat. Using tongs, place the veggies in the pan. I recommend putting as many slices of bell pepper on as you can because they’ll take the longest to cook. I also suggest flattening them out a little so that you can turn them over to cook both sides. The zucchini and eggplant will take about 3-4 minutes per side.

Everything stayed nice and hot. I then added the onions while the peppers continued to cook.

Tofu & Shiitake Stir-fry with Soba Noodles

Tofu and Shiitake Stir-fry with Soba Noodles -- Epicurean VeganThis is such an easy and tasty dinner to throw together—as long as you remember to give the veggies time to marinate. Even it’s just an hour, that’s quite all right. Feel free to use your own favorite veggies, but keep in mind, that you may have to marinate certain vegetables separate, depending on whether or not they need longer cooking time. The vegetables I chose could be all cooked together at the same time, so it made this dish a breeze.

INGREDIENTS
Marinade:
1/2 C tamari
2 Tbs brown rice vinegar
2 tsp agave
2 tsp sesame seed oil
2 Tbs sherry
1 tsp vegan Worcestershire sauce
2 cloves garlic, minced
1 Tbs ginger root, grated
1/2 C green onion, sliced
The rest:
8-oz shiitake mushrooms, sliced
14-oz pkg. extra firm tofu, drained, pressed and cubed
3/4 C snowpeas, cut in half
6 to 8 oz buckwheat soba noodles ( I like Hakubaku brand. They come in a package of 3 separate rolls of noodles. I used 2 of the 3)
1 Tbs olive oil
2 Tbs arrowroot

DIRECTIONS:
Combine all of the marinade ingredients in a resealable bag. Mix it up well, then add the mushrooms, tofu and snowpeas. Coat the vegetables thoroughly and lay flat in the refrigerator for at least an hour, turning over once, half way through.

Tofu and Shiitake Stir-fry with Soba Noodles -- Epicurean VeganIn a large skillet, heat the olive oil. Drain and reserve the marinade in a measuring cup; you should have about a 1/3 of a cup; set aside. Saute the vegetables over medium heat for 8-10 minutes, or until they begin brown. Meanwhile, heat the water for the noodles. They’ll only take 4 minutes to cook once adding them to boiling water, so it will all come together pretty quickly.

When the vegetables are about done, whisk the arrowroot into the reserved marinade. Make sure you don’t have any clumps. Pour it into the skillet, coat the vegetables well, and reduce the heat to low.

Cornmeal-Crusted Tempeh

Cornmeal-Crusted Tempeh -- Epicurean VeganI have been trying for some time now to find a recipe with tempeh that The Husband will like. He’s not big on these fermented soybeans. But I think I’m making progress! The flavor is outstanding, but I will admit, by themselves, the tempeh pieces are a little dry. I recommending serving them in a sauce or with a dipping sauce. The Husband and Sixth Grader had the audacity to dip them in ketchup – – -and like it! This would be so tasty to add to a stir-fry or instead of making small triangles, make tempeh burgers. Then maybe ketchup will be allowed. . .

INGREDIENTS:
2-8 ounce pkgs tempeh
1/2 C olive oil
Marinade:
1/4 C tamari
1/4 C shoyu
3 Tbs brown rice syrup
1 Tbs garlic, minced
1 Tbs fresh ginger root, grated/zested
Crust:
1/2 C cornmeal
1 tsp red pepper
1 tsp thyme
1 tsp oregano
1 tsp cumin
1/2 tsp salt

DIRECTIONS:
Preheat oven to 350. Cut tempeh into thirds, then slice each third lengthwise.You’ll end up with 12 slices. Whisk together marinade ingredients in a small bowl, then pour over tempeh.

Cornmeal-Crusted Tempeh -- Epicurean Vegan

Cover and bake for 1 hour.

Cornmeal-Crusted Tempeh -- Epicurean VeganLet cool, then cut tempeh into triangles. In a shallow dish/bowl, combine the crust ingredients. Heat oil in a large skillet. Meanwhile, dredge each piece of tempeh in the cornmeal mixture and cook in the oil for a minute on each side. I served these with some toasted almond pilaf and steamed kale—delicious! Enjoy!

Summertime Vegetable Marinade

Summertime Vegetable Marinade -- Epicurean VeganThere is nothing like some grilled veggies during the summer. It’s the Husband’s birthday so he wanted this recipe–which was served with Israeli couscous. You can serve the veggies as they are, or in a pita or tortilla. Skewer them or use a grill basket, like we did.

INGREDIENTS:
Marinade:
2 large cloves garlic, minced
1 C vegetable oil
1/4 C soy sauce
1/4 C vegan Worcestershire sauce
1/4 C Dijon mustard
1/4 C fresh lemon juice
1-2 tsp coarsely ground black pepper
Veggies:
I used:
3 bell peppers (1 red, 1 yellow, 1 orange)
1 large yellow onion, cut into large pieces
3 small zucchini, sliced into 1/2″ pieces
15 mushrooms, slice in half

DIRECTIONS:
Combine all marinade ingredients in a gallon-sized zip lock bag. Add veggies, but I recommend marinating the mushrooms in another bag because you’ll probably want to throw those on the grill last since they’ll cook fast. Refrigerate and turn bag halfway through marinating time.

Grill on medium heat (350 degrees)  for 20-30 minutes, or until desired tenderness, adding the mushrooms  about the last 8-10 minutes of cooking.

Smoky Tempeh Marinade

Smoky Tempeh Marinade -- Epicurean VeganNope…that’s not cubed steak.

This is a great marinade for tempeh and veggies. I chopped up some tempeh, mushrooms and onions, combined them in a large zip lock with the marinade for about 24 hours (you can easily just do an hour) and sauteed them up. The recipe is super versatile–crumble up the tempeh into small pieces and toss with a salad–both with greens or a taco salad–mix into a bean dip, or make tempeh burgers. If you don’t want too much of the smokiness, marinade for just 30 minutes–that would still give it a nice, subtle flavor.

INGREDIENTS:
1/4 cup tamari or soy sauce
1/4 cup Liquid Smoke
1 tablespoon agave nectar
1 teaspoon ginger
Splash of water
1 pkg tempeh, cubed

Remove tempeh and other veggies with a slotted spoon and discard the marinade when ready to saute.

Marinated Tempeh with Vegetables

Marinated Tempeh with Vegetables -- Epicurean VeganThis is just a great basic marinade that would work with seitan, tofu, or even as a stir-fry sauce and takes no time at all to throw together.

INGREDIENTS:
8oz tempeh, sliced into 16 triangles
3 Tbs minced ginger
4 Tbs Tamari
3 tsp brown spicy mustard
3 tsp sesame oil
1 Tbs mirin
1 Tbs Ume plum vinegar
4 Tbs water
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
6-8 mushrooms, quartered
(asparagus would be good, too)!

DIRECTIONS:
Preheat oven to 350. Whisk together the ginger, tamari, mustard, sesame oil, water, mirin and vinegar in  small bowl. In a medium-sized baking dish, combine the tempeh and vegetables and then coat thoroughly with the marinade. Cover with foil and bake for 20 mins. Remove foil, stir the tempeh and veggies and cover again; bake for another 12-15 mins. If you have more time, marinate the tempeh and veggies in the refrigerator for about an hour before baking.
