Spinach Linguine with Sausage and Sun-dried Tomatoes -- Epicurean Vegan

I came across Tofurky’s Spinach Pesto Artisan Sausage, but I didn’t really have a recipe in mind; it just sounded like good and I wanted to give ’em a whirl. One sausage offers 29 grams of protein! only 11 grams of carbs and only 1 gram of saturated fat. And of course, you won’t find any cholesterol in these sausages. Super tasty and paired with pasta and sun-dried tomatoes in a light oil and garlic sauce, it makes an excellent meal in very little time!

Spinach Linguine with Sausage and Sun-dried Tomatoes -- Epicurean Vegan

INGREDIENTS:
12-oz spinach linguine
2 Tofurky Spinach Pesto sausages, sliced
6-oz jar oil-packed sun-dried tomatoes, diced
4 cloves of garlic, minced
1/3 C olive oil
1 tsp vegan margarine
Salt and pepper, to taste
Vegan Parmesan, optional

DIRECTIONS:
Cook the linguine according to package instructions. Meanwhile, in a medium skillet, add the sausage and sun-dried tomatoes. Saute over medium-low heat, or until the edges of the sausage begin to brown.

In a small saucepan, heat the garlic, oil, and margarine to a low simmer, then remove from the heat. To serve, top individual servings of pasta with the sausage/sun-dried tomato mixture and drizzle with the garlic-oil sauce; top with vegan Parmesan and salt and pepper. Enjoy!

Ingredients

Zucchini Noodles with Pesto & Sun-dried Tomatoes

Zucchini Noodles with Pesto & Sun-dried Tomatoes -- Epicurean VeganI’d often see recipes using zucchini noodles and of course, they look delicious. I finally broke down and spent the $15 (minus 20% coupon from BB&B) and got the spiralizer.
20140607_085217This fancy little thing also works with carrots, potatoes, squash, etc. We planted zucchini this year, so I have a feeling this will come in handy this summer. We loved the noodles and even The Tenth Grader said he liked them more than pasta. It’s very easy to use and it gives you the option of making thin or thick noodles. We found that the thick noodles worked better. I had the teenager on it:
Zucchini Noodles with Pesto & Sun-dried Tomatoes -- Epicurean VeganAll I had to do was make the pesto and chop up the sun-dried tomatoes and dinner was ready in no time. Since there was only the two of us for this meal, we used just 2 zucchinis, but the pesto recipe makes enough for about 6 zucchinis. I also didn’t peel the zucchini, but you certainly may if you wish. The noodles can be pretty long, so you may want to cut them as you go for more manageable strands. Another thing, is that I slightly sauteed the noodles, but feel free to make this a raw meal by skipping that step.

INGREDIENTS:
2-6 medium zucchinis (depending on how many servings you’d like; about 1 zucchini per serving)
1/4 to 1/2 C sun-dried tomatoes in oil, chopped
Optional: Vegan Parmesan
1-2 Tbs Earth Balance
Pesto:
2 C fresh basil leaves
1 C spinach
1/4 C olive oil
1/4 C lemon juice
2 cloves garlic
1/2 tsp salt
1/2 tsp black pepper
2 Tbs nutritional yeast
1/2 C pine nuts or sunflower seeds

DIRECTIONS:
To make the pesto, combine all of the ingredients in a food processor, except for the pine nuts, and blend until smooth. Then add the pine nuts and process another minute.

Zucchini Noodles with Pesto & Sun-dried Tomatoes -- Epicurean VeganIn a large skillet, melt the Earth Balance and add the spiralized zucchini.
Zucchini Noodles with Pesto & Sun-dried Tomatoes -- Epicurean VeganSaute for only 3-4 minutes–just enough to warm the noodles. Again, you can omit this step for a raw-licious version. Zucchini cooks down fast, so don’t overdo it. Serve with a scoop or two of pesto, a few sun-dried tomatoes, and vegan Parmesan (if you’d like). Enjoy!

Quinoa with Sun-Dried Tomatoes & Zucchini

Quinoa with Sun-Dried Tomatoes & Zucchini -- Epicurean Vegan

This recipe comes from Whole Foods and originally had broccoli in it. The broccoli in my fridge had seen better days, so I decided to use zucchini. The recipe also says to not use sun-dried tomatoes packed with oil, but that was all I had, so I went ahead and used them. I think it came out delicious and I served it with open-faced TVP burgers—an ideal (and protein-packed) combo!

INGREDIENTS:
1/2 cup sun-dried tomatoes (not packed in oil–your choice)
1-1/2 cups low-sodium vegetable broth, divided
1 cup finely chopped red onion
3 cloves garlic, finely chopped
3/4 cup dry white wine
1/4 cup lemon juice
1 cup uncooked quino
1 small zucchini, sliced, then quartered
1/2 cup roasted cashew pieces
2-4 green onions, thinly sliced

DIRECTIONS:
If using (dried) sun-dried tomatoes, soak them in hot water for 15 minutes, then chop them once they soften. Bring 1/2 cup of the vegetable broth to a simmer. Add the onion and garlic; cook for 5 minutes. Add the chopped sun-dried tomatoes, the remaining 1 cup of the broth, white wine, and lemon juice. Bring to a boil. Stir in the quinoa. Reduce heat to a low and simmer, covered for 20 minutes. Add the zucchini to the top and cover; simmer another 10 minutes.

Once the zucchini is softened and the liquid has been absorbed, toss well to combine. Serve garnished with the cashews and green onions. Enjoy!

Kale and Cream Cheese-Stuffed Sweet Chilies

Kale and Cream Cheese-Stuffed Sweet Chilies -- Epicurean VeganGeez . . . it’s been a while since I last posted. The Sixth Grader (or should I say, soon-to-be The Seventh Grader) was on a week-long field trip so me and The Husband ate out a lot this week. Produce in my refrigerator, however, was feeling very neglected, so last night I decided to make these. They were delicious! We threw them on the grill, but you can also bake them in the oven at 350 for about 20 minutes. Use this stuffing for small chilies and serve them as appetizers, too.

INGREDIENTS:
3 large sweet chili peppers
10-oz Tofutti cream cheese
3 Tbs lime juice
1 tsp cumin
1 C fresh cilantro, chopped
6-8 sun-dried tomatoes, diced
1 bunch of kale
6-8 green onions, sliced
1/2 C vegan pepper jack cheese, shredded
2 tsp garlic, minced
2 tsp olive oil

DIRECTIONS:
Using a food processor or mixer, cream together the cream cheese, lime juice, cumin, and cilantro.

Kale and Cream Cheese-Stuffed Sweet Chilies -- Epicurean VeganIn a large saucepan or skillet, heat the olive oil and garlic. Add the kale. One bunch may seem like a lot (5-6 cups) but it will cook down quite a bit. Cook it over medium heat, constantly stirring it. I found that tongs work great for this. Cook for 4-5 minutes, or until nice and wilted.

Kale and Cream Cheese-Stuffed Sweet Chilies -- Epicurean VeganIn a large bowl, combine the sun-dried tomatoes, green onions, and cheese. Mix in the cream cheese mixture, then stir in the kale.

Kale and Cream Cheese-Stuffed Sweet Chilies -- Epicurean VeganTo prepare the chilies, there are a number of different ways to do it. First, slice the tops off and pull out the insides–as much as you can. You can either stuff them from the top, or slice them in the side. You can also slice them lengthwise, stuff them, then put them back together. I sliced into the side of it and found that that just worked better for the size of these chilies.

Kale and Cream Cheese-Stuffed Sweet Chilies -- Epicurean VeganPreheat the grill to a medium-high heat. Wrap the stuffed chilies in foil and place on the heated grill. Cook them for about 10 minutes, turning them often. Once the filling starts to drip out from the foil, remove them from the grill. Unwrap from the foil and enjoy!

“Cheddar” and Sun-Dried Tomato Dip

"Cheddar" and Sun-Dried Tomato Dip -- Epicurean VeganLike the Party Cheese Ball, people will not be able to tell this is vegan! I love this dip and I guarantee, so will your guests (that is, if you don’t eat it all yourself)!

INGREDIENTS:
4 oz Tofutti cream cheese
1/4 C Tofutti sour cream
1/2 C plain soy yogurt
2 C vegan cheddar, shredded (Daiya brand)
2 large garlic cloves, minced
4 scallions, sliced thin
8 (I recommend 10-12) oil-packed sun-dried tomato halves, drained and minced
Dash of salt

DIRECTIONS:
Stir together cream cheese, sour cream, and yogurt in a medium bowl. Stir in the cheddar, garlic, scallions,  tomatoes, and salt. Transfer to a serving dish and serve with crackers, chips and veggies. Enjoy!

Mediterranean Olive Bread

Mediterranean Olive Bread -- Epicurean VeganThe fresh rosemary in this bread reminds me of Christmas. Love it. I love this bread for many reasons: a.) it was fast and easy to make, b.) no need for yeast, c.) no kneading required and d.) it’s delicious.

INGREDIENTS:
4-1/2 tsp Ener-G Egg Replacer
6 Tbs water
1-1/2 C flour
3/4 C whole wheat flour
2-1/2 tsp baking powder
1 tsp fresh rosemary, chopped
1 tsp fresh basil, chopped
1/2 tsp salt
1 C nondairy milk (I used almond milk)
1/4 C olive oil
1/3 C finely chopped walnuts
1/3 C chopped pitted black olives
1/3 C chopped sundried tomatoes

DIRECTIONS:
Preheat oven to 350 and lightly grease an 8 or 9-inch loaf pan. In a food processor, whip the egg replacer and water together until thick and creamy. In a large bowl, combine the flours, baking powder, rosemary, basil, and salt. In a separate bowl, combine the egg replacer mixture, nondairy milk, and olive oil.

Add the wet mixture to the dry and fold until dry ingredients are moistened. Add the walnuts, sundried tomatoes, and olives; fold in just until the pieces are distributed. The batter will be stiff and sticky.

Scrape batter into the loaf pan and spread evenly.

Mediterranean Olive Bread -- Epicurean VeganBake for 40 minutes, or until an inserted toothpick comes out clean. Let cool in the pan on a rack for 5-10 minutes before taking out of the pan, then let cool completely on rack. Enjoy!

Pesto Pizza with Artichokes and Sun-dried Tomatoes

Pesto Pizza with Artichokes and Sun-dried Tomatoes -- Epicurean VeganThis is an easy pizza to make and will please even the non vegans–I guarantee. The recipe makes about 6 personal-sized pizzas so I tend to either refrigerate/freeze half the dough for another night, or make up all 6 pizzas for the next day’s lunch.

INGREDIENTS:
Dough:
2 C flour
1 C whole wheat flour
1 pkg quick-rise dry yeast
1 tsp salt
1 tsp dried rosemary
3/4 C hot tap water, divided
2 Tbs olive oil
The rest:
1-14oz can artichokes, chopped
6-oz jar sun-dried tomatoes, diced
8-oz vegan mozzarella, shredded
1-1/2 C pesto
Optional toppings: mushrooms, olives, spinach, roasted red peppers

DIRECTIONS:
In a small bowl, combine yeast with 1/4 C of the hot tap water; set aside.  In a large bowl, combine flours, salt, and rosemary. Add yeast and olive oil to the flour mixture and combine, adding the remaining 1/2 C of hot tap water. You may need a little more. Once ingredients are thoroughly combined, place in a large greased bowl and let rise for 30 minutes.

Preheat oven to 400. Punch the dough down and knead for 5 minutes. Divide into 6 sections; roll out each section and place on a greased pizza pan or baking sheet. Using a fork, stick each piece of dough several times. Bake for 4 minutes.

Spread each baked crust with a layer of pesto, then top with cheese, artichokes, and sun-dried tomatoes. Bake 8-10 minutes. Enjoy!
