Collard Green Wraps with Tahini-Umeboshi Sauce

Collard Green Wraps with Tahini-Umeboshi Sauce -- Epicurean VeganSorry I’ve been a bit MIA lately. Life is quite busy these days, especially with my alter ego. For the last few days, the family has dined on easy things like spaghetti, veggie burgers, and canned soup. Looking into their Oliver Twist eyes, I knew I needed to make an effort with dinner. Thank goodness for Green Buffalo Foods—they delivered my box of veggie love this afternoon and I swooned at the beautiful collard greens I received.

Collard Green Wraps with Tahini-Umeboshi Sauce -- Epicurean VeganYou could easily make spring rolls using collard greens, or make them with rice instead of noodles, like I did. The ingredients can easily be varied with this recipe, so get creative! I liked using the collard greens because of their fabulous nutritional value and durability when rolling them up. I think next time though, I’ll steam them just a tiny bit before filling them up, rather then afterward—they may fare better.

INGREDIENTS:
12 collard green leaves, washed and patted dry
8-oz firm tofu
6-8 mushrooms, sliced
4 large green onions, sliced
1-15oz can Great Northern beans, drained
1 C long-grain rice, uncooked
2 tsp garlic, minced
1-2 tsp olive oil
Salt and pepper, to taste
Tahini-Umeboshi Sauce:
1/3 C tahini
2 tsp umeboshi paste
2 tsp lemon juice
2 Tbs tamari
2 Tbs water
2 Tbs almond milk

DIRECTIONS:
Combine rice with 1-1/2 cups of water. Bring to boil; stir and cover for 15 minutes, or until water has absorbed. You can also use jasmine scented rice, or arborio rice. Sushi rice would also be great. In the meantime, slice tofu into thin slices (julienned) saute in a dry skillet until slightly browned, about 10 minutes. Remove from the skillet. In its place, add the garlic and olive oil. Heat for a minute, then add the green onions and mushrooms. Saute until slightly browned and soft. Add the rice, beans, and tofu and stir to combine. Season with salt and pepper.

Collard Green Wraps with Tahini-Umeboshi Sauce -- Epicurean VeganCut the fat stem off of the collard green. Don’t cut off too much—just to where it starts to thin out and add 1-2 spoonfuls of the rice mixture onto the leaf.

Fold in the two “tails” of the collard green leaf:

Now fold the opposite side in:

Then roll from the bottom up and secure with a toothpick. Spear it through the stem, if you can. You’ll be left with a neatly rolled wrap:

I then placed them in a steamer basket and steamed them for just a few minutes.

You’ll probably have to do this in batches, so I recommend transferring them to a plate after steaming and covering with foil.

To make the sauce, whisk together all the ingredients and serve with the warm wraps. Enjoy!

You could easily make spring rolls using collard greens, or make them with rice instead of noodles, like I did. The ingredients can easily be varied with this recipe, so get creative! I liked using the collard greens because of their fabulous nutritional value and durability when rolling them up. Ingredients

Sweet Potato, Kale and Black Bean Fajitas

Sweet Potato, Kale and Black Bean Fajitas - Epicurean VeganI’mmmm baaaacckkk! And boy, does it feel good. I had an amazing conference experience that you can read about at Folsom’s 93 and then a fabulous respite up in the mountains where we got to spend time with some great friends and just relax. It was the perfect opportunity to try out a new recipe from my friend at Tried and Tasted Recipes and it was absolutely delicious! I will be making this again and again. It makes quite a bit, as we fed about 8 and still had leftovers.

INGREDIENTS:
3 Tbsp extra virgin olive oil, divided
1 large or 2 medium sweet potatoes, peeled and chopped into 1/4 inch cubes (I used 2)
2 red bell peppers, diced
1 large red onion, diced
10 cloves garlic, minced, divided
1 large bunch of kale, rinsed and roughly chopped
1 can black beans, rinsed and drained (I used 1-1/2 cans)
2 tsp ground cumin, divided (I recommend more)
1 tsp ancho chili powder (again, I suggest adding more)
Freshly ground salt and pepper
8 tortillas
Optional ingredients: Cilantro, Tofutti sour cream, vegan shredded cheddar or pepper jack cheeze, guacamole

DIRECTIONS:
In a large saucepan, heat 2 tablespoons of olive oil and add 6 cloves of minced garlic; saute 5 minutes. Add the potatoes and peppers, and saute another 5 minutes. Stir in 1/2 tsp of the cumin and the ancho chili powder. Turn to medium heat and cook for 10 minutes, then season with salt and pepper.

In a smaller saucepan, heat the remaining 1 tablespoon of olive oil and garlic. Add the beans and kale; stir once and cover for 2-3 minutes, or until the kale has cooked down. Season with the rest of the cumin and more salt and pepper.

Sweet Potato, Kale and Black Bean Fajitas - Epicurean VeganServe a scoop or two of each mixture onto warmed flour tortillas with Tofutti sour cream, cilantro, cheeze, and guacamole. You won’t be disappointed—they are outstanding!

Mexican Fettuccine

Mexican Fettuccine -- Epicurean VeganI’ve had some sun-dried tomato pasta in the pantry for a while, so I decided it was high time to do something with it, but any type of pasta will do for this meal. After taking his first bite, The Husband remarked, “Now that’s a smorgasbord of flavors!” It was definitely flavorful and it seemed to gather steam with every bite!

INGREDIENTS:
8-oz sun-dried tomato fettuccine
1/2 C walnuts, chopped
1/2 C salsa
2 C spinach, chopped
1/2 C black olives, sliced
2 Tbs olive oil
2 Tbs nutritional yeast flakes
2 Tbs water
Salt and pepper, to taste
2 green onions, sliced
Tofutti sour cream
Cilantro

DIRECTIONS:
Cook pasta according to package instructions. In the meantime, in a medium sauce pan, toast the walnuts for about 3 minutes. Add the salsa, spinach, black olives, olive oil, nutritional yeast flakes, water, salt, and pepper. Combine well and let simmer on a low heat until spinach has cooked down and everything is heated through.

Mexican Fettuccine -- Epicurean Vegan

Top individual servings of pasta with the sauce, a dollop of Tofutti sour cream, cilantro and green onions. Enjoy!

Tomato and Cheez Souffle

Tomato and Cheez Souffle -- Epicurean VeganWe’ve all heard about disasters involving souffles, but this is one souffle that’s pretty difficult to screw up. This comes from The Ultimate Uncheese Cookbook and it really can’t get any easier than this. The recipe calls for a 2-quart baking or souffle dish. A square 8″ baking dish is 2 quarts, but I soon realized that the sides need to be higher. I ended up using less bread and tomatoes, but the same amount of sauce. Next time I’ll use a bigger baking dish,  but it still came out amazing. The taste and texture is a lot like lasagna and I think adding some spinach and mushrooms would be ideal!

INGREDIENTS:
1-1/2 C water
1/2 C roasted red peppers (skins and seeds removed) or pimento pieces (I used a mixture of both)
1/2 C raw cashews
3 Tbs nutritional yeast flakes
3 Tbs lemon juice
2 Tbs nonalcoholic white wine (I used white cooking wine)
1-1/2 tsp onion powder
1-1/4 tsp salt
1/2 tsp dry mustard
1/2 tsp thyme
1/2 tsp garlic powder
Black pepper, to taste
6-9 slices whole-wheat or rice bread (easily make it gluten-free)!
3 ripe tomatoes, sliced

DIRECTIONS:
Preheat oven to 375. In a blender, combine all the ingredients except the bread and tomatoes. Lightly oil a 2-quart souffle dish. Layer 2-3 slices of bread on the bottom, followed by sliced tomatoes. Pour 1/3 of the sauce on top and repeat layers two more times.

Bake until lightly puffed and golden brown, about 45-50 minutes. It’s that easy!

Vegan Shepards Pie

Vegan Shepards Pie -- Epicurean VeganThis is actually easier to make than you would think. You can nuke 2 large potatoes, or use frozen ones (thawed, of course). I used edamame for some added protein, but feel free to use peas if your prefer. Easier, healthier, comfort food.

INGREDIENTS:
1 bag Boca Crumbles
1 small onion, diced
1-1/2 C cremini mushrooms, sliced
1 C edamame, thawed if frozen
1 C vegetable broth
2 C mashed potatoes
1/4 C almond milk
2 tsp dried chives
1 tsp dried parsley
1 clove garlic, minced
Salt and pepper
1/2 C vegan mozzarella, shredded
Vegan margarine

Vegan Shepards Pie -- Epicurean Vegan

DIRECTIONS:
Preheat oven to 350. In a large skillet heat the vegetable broth and add the onions and Boca crumbles. Cover and let simmer over a low-medium heat, season with salt and pepper; stirring occasionally. After about 10 minutes, add the mushrooms and edamame. Cover again for 5 minutes.

Vegan Shepards Pie -- Epicurean VeganMeanwhile, add the potatoes, milk, mozzarella, chives, parsley, and garlic in a mixer and cream until slightly smooth.

Vegan Shepards Pie -- Epicurean VeganLightly grease a 9×13″ baking dish with a little vegan margarine.  Pour the Boca mixture into the bottom of the pan and spread out evenly. Next, layer on the mashed potato mixture and spread evenly over the top.

Cuban Black Bean and Potato Soup

Cuban Black Bean and Potato Soup -- Epicurean VeganThis comes from the latest issue of Vegetarian Times and was pretty easy to make. I altered a couple of things and it made a comforting, hearty meal.

INGREDIENTS:
1 medium onion, diced (1-1/2 C)
1 small red bell pepper, diced (1 C)
1 small green bell pepper, diced (1 C)
6 cloves garlic, minced
6 C cooked black beans, (I used canned–drained) divided
3 medium potatoes, diced (2-1/2 C)
2 Tbs white wine vinegar
1 Tbs cumin
1 Tbs fresh oregano leaves (I used dried)
1 bay leaf (I left this out)
1/2 tsp salt
Green onions, sliced for a garnish
Optional: vegan cheddar, Tofutti sour cream, salt and pepper

DIRECTIONS:
In a large soup pot, saute the bell peppers, onions and garlic in a bit of water or vegetable broth for 2-3 minutes.

I think a low-sodium vegetable broth would be great, too.  Puree until the mixture resembles a thick soup. I didn’t have enough room in my food processor for all of this, so I pureed what I could, transferred half the mixture back to the soup pot, then pureed the rest with the rest of the water. Transfer to the soup pot and add the rest of the beans, potatoes, vinegar and seasonings. Bring to a simmer; reduce to medium-low heat, cover, and simmer for 20 minutes. Garnish each serving with green onions and/or other optional ingredients. Enjoy!

Chickpea Burgers with Ricotta Sauce

Chickpea Burgers with Ricotta Sauce -- Epicurean VeganI saw this recipe in the January issue of Shape magazine and knew it’d be a great one to make. I had to make some alterations to veganize it and to just make the process easier. The recipe is for 4 burgers, but next time, I’ll make 3. They were a little wimpy as 4 and since there’s 3 in my little vegan family, it’ll just work out better. The recipe also called for panko breadcrumbs, but I forgot to pick some up, so I went with regular bread crumbs. Not a big deal, but I’ll seek those out next time, too. These are pretty simple to throw together and dinner is ready in under 30 minutes.

INGREDIENTS:
1-15 oz can chickpeas, drained and rinsed
1/4 C chopped parsley
1 clove garlic, minced
1 tsp cumin
1 tsp coriander
1 tsp Ancho chili powder
Black pepper
2 tsp egg-replacer powder + 2-1/2 Tbs water
1/4 C +2 Tbs panko or regular bread crumbs
1/3 C ricotta (I had some of my go-to tofu ricotta in the freezer)
2 Tbs plain nondairy yogurt
Whole wheat buns
Cucumber, sliced
Tomato, sliced
Spinach leaves

DIRECTIONS:
Place the top oven rack 8-10 inches from the broiler heat. Preheat oven broiler to high. In a small bowl, whisk together egg-replacer powder and water; set aside. In a large bowl mash the chickpeas a little with a fork; add the parsley, garlic, and spices; season with black pepper.

Chickpea Burgers with Ricotta Sauce -- Epicurean VeganStir in the egg-replacer and 2 Tbs of the panko or bread crumbs. Pour remaining bread crumbs onto a plate and prepare a baking sheet with cooking spray. As you shape into 3 (or 4) patties, dredge them in the bread crumbs and place onto the baking sheet.

(I also should have chopped the parsley more)

Broil for 4-5 minutes per side. Meanwhile, combine the ricotta and yogurt in a food processor or blender.

I saw this recipe in the January issue of Shape magazine and knew it'd be a great one to make. I had to make some alterations to veganize it and to just make the process easier. The recipe is for 4 burgers, but next time, I'll make 3. They were a little wimpy as 4 and since there's 3 in my little vegan family, it'll just work out better. The recipe also called for panko breadcrumbs, but I forgot to pick some up, so I went with regular bread crumbs. Not a big deal, but I'll seek those out next time, too. These are pretty simple to throw together and dinner is ready in under 30 minutes.

Ingredients
  • 1-15 oz can chickpeas, drained and rinsed
  • ¼ C chopped parsley
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp Ancho chili powder
  • Black pepper
  • 2 tsp egg-replacer powder + 2-1/2 Tbs water
  • ¼ C +2 Tbs panko or regular bread crumbs
  • ⅓ C ricotta (I had some of my go-to tofu ricotta in the freezer)
  • 2 Tbs plain nondairy yogurt
  • Whole wheat buns
  • Cucumber, sliced
  • Tomato, sliced
  • Spinach leaves
Directions
  1. Place the top oven rack 8-10 inches from the broiler heat. Preheat oven broiler to high. In a small bowl, whisk together egg-replacer powder and water; set aside. In a large bowl mash the chickpeas a little with a fork; add the parsley, garlic, and spices; season with black pepper.
  2. Stir in the egg-replacer and 2 Tbs of the panko or bread crumbs. Pour remaining bread crumbs onto a plate and prepare a baking sheet with cooking spray. As you shape into 3 (or 4) patties, dredge them in the bread crumbs and place onto the baking sheet.
  3. Broil for 4-5 minutes per side. Meanwhile, combine the ricotta and yogurt in a food processor or blender.
  4. Serve burgers on the buns with the ricotta sauce, tomato, spinach, and cucumber. Enjoy!

Thai Green Curry Chickpea Burritos -- Epicurean VeganWhen we were visiting my sister in Northern California recently, she made us these fabulous burritos. The ingredients are from Trader Joe’s, so I was sure to pick the items up before returning to Trader Joe’s-less Colorado. 🙁 Taste of Thai makes a green curry paste  though that could be substituted in with some coconut milk. However, a sub for the Cumin and Chickpea mix also required for the recipe, was hard to locate. So if you’re lucky enough to live near a Trader Joe’s, or have a generous relative to send you TJ loot, this recipe is for you. Are you listening, sis? 😉

INGREDIENTS:
1-12 oz jar Thai Green Curry Simmer Sauce
1-8 oz pkg Cumin and Chili Chickpea mix
1 medium zucchini, sliced, then quartered
1-15 oz can chickpeas (garbanzo beans), drained and rinsed
Olive oil
Flour tortillas
Optional: Tofutti sour cream, fresh cilantro

DIRECTIONS:
I sauteed the zucchini and can of drained chickpeas for about 3-4 minutes. Add the bag of seasoned chickpeas and jarred curry sauce. Stir well to combine. Reduce heat to low and simmer covered for 20-25 minutes.

Open-Faced TVP Burgers and Sweet Potato Fries with Truffle Oil -- Epicurean VeganI’ve been intrigued for some time now with TVP (Textured Vegetable Protein) and so I bought some from the bulk section of my natural grocer’s. I pretty much winged it and found that the process of making a veggie burger is quite simple—not much of a mystery. I ended up with some delicious burgers that tasted fresh, flavorful, and home cooked. They have a meatloaf quality to them, so the Husband went with just ketchup on his. I went all out with spinach, a vegan cheese slice, tomato, avocado, and drizzled with vegan ranch dressing. I made 6 large patties, but feel free to halve the recipe, or even freeze the extra ones. And don’t forget . . . TVP contains the same amount of protein as meat and has no fat!

INGREDIENTS:
Burgers:
2 C TVP
2 C vegetable broth
3/4 C quick oats
1/2 C flour
1/2 C nutritional yeast
1 Tbs wheat germ
1 tsp garlic powder
1 tsp onion powder
2 tsp smoked paprika
1/4 tsp Ancho chili powder
1 tsp salt
2 Tbs ketchup
6 tsp egg replacer powder + 8 Tbs water
1/2 C onion, chopped fine
1/2 C green bell pepper, chopped fine
Other: “burger” fixings: tomato, avocado, lettuce/spinach, vegan ranch, cheese, etc.

Sweet Potato Fries:
1-2 medium sweet potato or yams. sliced into fries
Olive oil
Truffle oil
Celtic Sea Salt

DIRECTIONS:
For the burgers, boil the vegetable broth in a medium saucepan. Stir in the TVP, cover, and remove from the heat for 5 minutes.

Combine all the dry ingredients, onion, and bell pepper  in a large mixing bowl. Add the TVP, ketchup, and egg-replacer to the dry ingredients and combine well.

Open-Faced TVP Burgers and Sweet Potato Fries with Truffle Oil -- Epicurean VeganShape into patties and place on a baking sheet that will fit in the fridge. Chill covered with plastic wrap for 30-90 minutes. I’d say the longer the better, to give some time to firm up. They won’t cook down much at all, so consider thickness as you make the patties.

Once the patties are ready, spray a flat skillet or pan with some cooking spray. You can also grill these over medium heat, but I didn’t want to mess with the grill.  About 5-7 minutes per side over medium heat.

For the fries, combine them in a large bowl, drizzle with about 1 tablespoon of olive oil, 1-2 teaspoons of truffle oil, and sprinkle generously with the sea salt. Layer onto a baking sheet lined with foil.

Bake at 400 for 25-30 minutes. Check often, as they may need more or less time.

Portobellos with Tomatoes and Truffle Cheeze Sauce

Portobellos with Tomatoes and Truffle Cheeze Sauce -- Epicurean VeganWe got some beautiful portobellos and tomatoes from Green Buffalo Food Co. and this came together so fast. The truffle cheeze sauce is amazing! I could have eaten it with a spoon—it is rich, creamy and perfect for veggies, pasta, or by the spoonful!

INGREDIENTS:
1/2 Tbs olive oil
2 Portobello mushrooms, stem and gills removed
2-4 large basil leaves (I used spinach, but I think I’d prefer basil for more flavor)
4 tomato slices
Sauce:
1/3 C almond milk
1/2 C Daiya mozzarella
1/8 tsp (or less) white truffle oil

DIRECTIONS:
Heat the olive oil in a large skillet. Place portobellos, face down, in the pan and lightly saute for about 2 minutes. Turn over and saute the other side. Add the basil leaves and 2 tomato slices per mushroom. Reduce heat to low and cover.

Portobellos with Tomatoes and Truffle Cheeze Sauce -- Epicurean VeganTo prepare the sauce, bring the almond milk just to a boil, reduce heat to medium and whisk in the cheeze and truffle oil. Whisk until smooth—it’ll only take a couple of minutes.

Serve the portobellos with sauce drizzled on top and enjoy!
